Chahd Rif operates in the transitional zone between the Rif
Mountains and the eastern plains — a landscape of limestone ridges, scrub oak,
and terraced olive groves that produces olive oil with a distinctly mineral,
herbaceous character.
The cooperative pools the harvests of small family landowners
who work plots too small to process independently. By aggregating, they can
access a proper mill, negotiate fair pressing contracts, and bottle under a
shared label rather than selling raw oil to a bulk trader at harvest-floor
prices.
The olive varieties grown in this zone — primarily Picholine
Marocaine — produce oils with naturally low acidity and high polyphenol
content. The harvest window is short, typically three to four weeks in
November, and the cooperative presses within 24 hours of picking to protect
quality.
What they make: Extra virgin olive oil, table olives
(black and green), olive-based personal care products, and seasonal preserved
goods.
