Wild Honey & Beekeeping — Oriental Region. Hives placed across uncultivated hillsides and river valleys, following the seasonal flowering of wild plants: euphorbia, jujube, sidr, and wild thyme.
Located near Jebel Ouarirt, this cooperative produces rare and high-value honey varieties, including jujube honey, along with hive products such as zandaz and propolis.
Traditional Foods & Wild Herbs — Archida, Guercif Province. One of the oldest active women's cooperatives in the province: stone-ground couscous, hand-rolled pasta, and dried herbs gathered from the hillsides above the Melloulou valley.

Early harvest olive oil, picked before the olives fully ripen and pressed within 24 hours at a stone mill in the Guercif region. Intensely green, vivid, with a desirable peppery bite.
