The hillsides above the Melloulou river are covered in wild rosemary and thyme that flower from late winter through early spring. At that time, Amal Cooperative moves its hives up into this zone and lets the bees forage freely across the slopes for six to eight weeks.
The resulting honey is aromatic and herbal — clearly floral, with the unmistakable character of both plants woven through it. Thyme brings a warm, slightly antiseptic note; rosemary adds brightness and a faintly resinous complexity. Together they make a honey that works as both food and medicine in traditional Moroccan household practice.
Raw and unheated. Light amber in color, semi-liquid at room temperature, with a fine granular texture when crystallized.
How to use: In mint tea. On bread with fresh goat cheese. In salad dressings. As a natural remedy for sore throats and seasonal illness.
