These are whole table olives — not pressed, not processed into oil, just cured and packed. The variety is Picholine Marocaine, harvested at the red stage: past green, not yet fully black, with the flesh at its firmest and its flavor most complex.
Cured traditionally in brine with a mix of local spices — cumin, preserved lemon, hot pepper, and wild herbs — they are ready to eat straight from the jar. The cure is light enough that the olive's own character remains the main event.
Taste: Firm bite, mildly salty, faintly fruity with the spice mix present but not dominant.
Best served: As part of a Moroccan table spread (kemia), alongside grilled meat, with bread and olive oil, or as part of a cheese or charcuterie board.
