Traditional Foods & Wild Herbs | Rchida, Guercif Province

Our Story

Nisae Archida — the women's cooperative of Rchida — is one of the oldest active women's cooperatives in Guercif Province. Founded in the rural commune of Rchida, it gathers women from farming households who have long produced food for their families using methods unchanged for generations: stone-ground couscous, hand-rolled pasta, dried herbs gathered from the hillsides above the Melloulou valley.

The cooperative's products are seasonal by nature. Couscous is made in batches after the wheat harvest. Herbs are gathered at peak potency — armoise in early summer, wild thyme before flowering, rosemary from the rocky slopes above the river. Nothing is stored long or pushed out of season.

Nisae Archida joined guercif.com to sell beyond the local weekly market, reaching customers in Fès, Casablanca, and the Moroccan diaspora abroad who grew up eating this food and cannot find its equivalent elsewhere.

What they make: Hand-rolled couscous, dried wild herbs (armoise, thyme, rosemary, verbena), traditional grains, and seasonal preserved foods.
