On the groves of Kaf El Ghar, and the quiet technique that made them.
North of Taza, where the road climbs into the pre-Rif and the tarmac gives out, there is a track that runs for fifteen minutes through olive trees. Not past olive trees — through them. They do not stop. They do not thin out into scrub and resume. For a quarter of an hour there is nothing on either side but old olive, and then the track ends and they are still going.
What strikes you first is not the age of them. It is the disorder. These trees are not in rows. They are not evenly spaced, not uniformly sized, not aligned to any slope or contour a planner would have chosen. Trunks the width of a doorway rise beside trees a third that size. Several stems climb from a single base, splayed apart like fingers. Nothing about it looks planted.
That is because, in all likelihood, it was not.
The clue is in the shape
An orchard betrays itself. Someone stood in a field, decided on a spacing, and put trees in the ground at intervals. Centuries later the rows may be crooked and gapped, but the intention is still legible.
The groves of the Moroccan mountains often carry no such intention. Their arrangement follows the terrain — a tree where there was soil enough, a gap where there was rock. And the trees themselves are the wrong shape for an orchard: too massive, too irregular, too many-stemmed.
Both of those oddities have the same explanation, and it is one of the more remarkable things in Mediterranean agriculture.
The grove grew out of the forest
Researchers working across northern Morocco have documented a practice quite unlike orchard planting. As farmers cleared woodland and scrub for cultivation, they did not clear all of it. They left the wild olive standing.
The wild olive — the oleaster — is the same species as the cultivated tree but a different creature: smaller-fruited, tougher, deep-rooted, at home on ground that would defeat a nursery sapling. Farmers spared these wild trees, and then grafted cultivated olive onto them. The wild tree kept its roots and its trunk; the canopy above became the variety the farmer wanted.
The consequence is that the grove did not replace the forest. It grew out of it, tree by tree, over generations. What you drive through at Kaf El Ghar is not land that was cleared and planted. It is woodland that was converted, one graft at a time, by people who saw no reason to kill a good tree in order to farm it.
Why they did it that way
Not sentiment. Judgement.
Ask farmers in these mountains and the answer comes back consistently: a tree grafted on wild rootstock is more vigorous, harder to break in a wind, better able to survive a dry year, and gives better oil. They credit the taproot — the deep anchoring root the wild tree grew before anyone touched it, reaching water that a shallow-rooted plant never finds.
In a mountain terroir with thin soil, hard winters and a drought every few years, that is not a small advantage. It is the difference between a grove that persists and one that does not.
And the practice has a second consequence, less obvious and more interesting. Because every graft is a decision — this scion, onto that rootstock, in this particular place — the resulting groves are genetically various in a way that a nursery-planted orchard never is. Researchers describe it as a domestication that never quite finished: still going on, tree by tree, in the hands of farmers rather than breeders.
What we cannot tell you
We are not going to tell you how old these trees are.
It is the obvious thing to claim, and we could get away with it — everyone else does. But olive wood cannot be reliably read for rings the way an oak can, the heartwood of an old olive is usually gone to rot long before anyone thinks to look, and the tree regenerates endlessly from its own base, throwing up new stems as old ones fail. A trunk may be young while the organism beneath it is very old indeed. Where careful work has been done elsewhere in the Mediterranean, trees confidently described as thousands of years old have turned out to be centuries old instead.
So the honest answer about any particular tree at Kaf El Ghar is that nobody knows, and anybody who gives you a number is guessing.
We will not give you a number. We will tell you the floor. There are trees of documented age nearby — ninety years old — and beside these they are saplings. Whatever is standing at Kaf El Ghar has been standing a great deal longer than a century.
What can be said beyond that is sturdier still. Morocco is one of only three regions in the entire Mediterranean where the wild olive is thought to have survived the ice ages — a refuge, with the Levant and the Aegean, from which the cultivated olive was drawn. The practice of grafting onto wild stock is documented, studied and still alive. And the trees on this track are shaped exactly as that practice shapes trees.
Why we tell you this
Because it is a better story than the one we could have told, and it has the advantage of being defensible.
The easy version says: ancient trees, thousand-year heritage, timeless Morocco. It is available to anyone with a camera and it means nothing, because it can be neither checked nor disproved.
The harder version says something specific about how this landscape was made and by whom: that generations of farmers in these mountains developed a way of creating orchards without destroying the woodland they came from, and that they judged the result to be better — stronger trees, better oil — than the alternative. That is a claim about skill, and it belongs to the people who live here.
It is also, we think, the most interesting thing about the oil. Not that the trees are old — though stand under one and you will not argue. That nature planted this grove, and every tree in it was still a human decision.
